Chicken Meatball Soup

Ingredient

250g chicken mince·
⅓ cup fresh breadcrumbs·
1 clove garlic, crushed·
2 tablespoons chopped coriander·
Cooking oil spray·
1 chicken stock cube·
¼ cup soy sauce·
100g dried udon noodles·
2 green onions, cut into lengths·
3 baby buk choy, halved lengthwise
Recipe
Combine mince, breadcrumbs, garlic and coriander in a bowl.
Shape into 10 meatballs. Spray with oil. Heat a saucepan over moderate heat.
Cook and turn meatballs for 5 minutes or until cooked. Remove from pan. Place
crumbled stock cube, soy sauce and 4 cups water in saucepan. Bring to the boil.
Add noodles; cook for 5 minutes or until tender. Add meatballs, onions and bukchoy;
cook for 2 minutes. Serve.
