Chicken Meatball Soup

Ingredient

·        
250g chicken mince

·        
⅓ cup fresh breadcrumbs 

·        
1 clove garlic, crushed

·        
2 tablespoons chopped coriander

·        
Cooking oil spray 

·        
1 chicken stock cube

·        
¼ cup soy sauce

·        
100g dried udon noodles

·        
2 green onions, cut into lengths

·        
3 baby buk choy, halved lengthwise

Recipe

Combine mince, breadcrumbs, garlic and coriander in a bowl.
Shape into 10 meatballs. Spray with oil. Heat a saucepan over moderate heat.
Cook and turn meatballs for 5 minutes or until cooked. Remove from pan. Place
crumbled stock cube, soy sauce and 4 cups water in saucepan. Bring to the boil.
Add noodles; cook for 5 minutes or until tender. Add meatballs, onions and bukchoy;
cook for 2 minutes. Serve.
