Curried Sausage Pie

Ingredient

·        
2 tablespoons vegetable or olive oil

·        
3 onions, thinly sliced

·        
450g thick beef sausages

·        
500g frozen winter vegetable mix

·        
¼ cup rogan josh curry paste

·        
1½ tablespoons cornflour

·        
2 sheets frozen puff pastry, thawed

·        
Mixed salad leaves, to serve

Recipe

1.    Heat half the
oil in a large deep ovenproof frying pan over moderate heat. Add the onions;
cook and stir for 10 minutes or until golden. Transfer to a heatproof bowl.

2.    Add the
remaining oil to pan. Cook and turn sausages for 8 minutes or until cooked.
Transfer to a chopping board. Thickly slice. Add vegetable mix to pan; cook and
stir for 5 minutes or until thawed. Combine curry paste, corn flour and 1 cup
water in a small jug. Add curry mixture and sausage to pan. Bring to the boil,
stirring. Cook and stir for 1 minute or until mixture thickens.

3.    Preheat oven to
220°c/200°c fan-forced. Place pastry on a work surface; sprinkle with onion.
Roll pastry to enclose onions. Slice pastry logs into 2cm-wide rounds. Place
rounds, cut-side up, over sausage filling. Bake for 30 minutes or until golden
and puffed. Serve with salad leaves.
