Apple Pancakes

1 cup self-raising flour·
¼ teaspoon bicarbonate of soda·
¼ cup caster sugar·
1¼ cups buttermilk·
1 egg·
30g butter, plus 1 tablespoon extra·
2 tablespoons maple-flavoured syrup, plus extra, to serve·
2 apples, cored, thinly sliced·
300ml thickened cream·
1 teaspoon vanilla essence

Sift flour and bicarbonate of soda into a bowl. Stir in sugar. Make a
well at centre of flour mixture. Gradually whisk in combined buttermilk and egg
until smooth.

Meanwhile, melt butter in a large frying pan over moderate heat. Add
maple syrup and bring to a simmer. Add apple slices in a single layer. Cook for
1 minute each side. Remove and set aside.

Wipe pan clean. For each pancake, melt a little of the extra butter in
the same pan. Place three apple slices, side by side, in pan. Pour a ¼-cup
measure of batter over apple, to cover. Cook for 1 minute or until bubbles
appear on the surface. Turn; cook for a further 1 minute or until cooked. Whip
cream and essence in a bowl until soft peaks form. Serve pancakes with cream
and extra syrup.
