Chocolate Peanut Butter Cups
Here’s an easy-peasy take on Reese’s Peanut Butter Cups.
Ingredients

1tbsp coconut oil·
280g dark chocolate, chopped·
150g peanut butter

In a saucepan, melt the coconut oil and chocolate over a low
heat. Mix with a spatula until smooth. Stack several small paper cases inside
one another to help keep the paper pleat intact – otherwise, the pressure of
the chocolate pushes out the sides and distorts the shape. Make 15 stacks for
the ‘cups’.·
Using a ratio of 2 parts chocolate to 1 part peanut butter, pour
a little of the chocolateoil mixture into the bottom of the paper case stacks
and allow the mixture to set in the fridge for a few minutes.·
Put a little peanut butter into the middle of each cup, then
cover each one with more of the chocolate-oil mixture. Place them all in the
freezer for at least 10 mins.·
Once the peanut butter cups have frozen solid, remove the extra
reinforcing layers of paper cases. Take the cups out of the freezer a minute or
so before serving.
