Ingredient

·        
250g packet microwave express white rice

·        
270ml can coconut milk

·        
½ cup milk

·        
1 teaspoon vanilla bean paste

·        
4 kaffir lime leaves, halved

·        
½ cup grated palm sugar

·        
Roasted coconut chips, passion fruit, kiwi fruit
and lime wedges, to serve

Recipe

1.   
Microwave rice following packet directions.

Meanwhile, place coconut milk, milk, vanilla,
kaffir lime leaves and palm sugar in a heavy-based saucepan. Bring to a simmer
over medium-high heat. Reduce heat to medium-low. Simmer, stirring, for 2
minutes or until sugar has dissolved.

3.   
Stir in rice. Simmer gently for a further 5 to 7
minutes or until thickened. Remove and discard lime leaves. Divide among bowls.
Top with passion fruit and coconut. Serve with kiwi fruit and lime wedges.

Cook’s notes

• Rice mixture will thicken on standing.

• You can use brown sugar instead.
