¼ c. red wine vinegar

2 tsp. sugar Salt

2 shallots, very thinly sliced

4 oz. cream cheese, softened

·        
4 lg. (about 7 in, wide) or 8 sm. Slices
pumpernickel bread, lightly toasted

3 plum tomatoes, thinly sliced

·        
8 oz. sliced smoked salmon

·        
1 oz. goat cheese, crumbled

·        
½ c. watercress, trimmed

  1. In small microwave-safe bowl stir
    together vinegar, sugar, 2 tablespoons water, and pinch of salt. Add
    shallots, stirring to combine. Microwave on High 2 to 3 minutes or until
    shallots are crisp-tender. Drain and let cool.
  2. Spread cream cheese on each slice of
    bread. Top with tomatoes. Divide salmon, then shallots, among bread
    slices. Top with goat cheese and watercress.
