Sticky Jerk-spiced Nuts

The sugar caramelises fast, so have a plate ready to tip the
nuts on to.

Ingredients

·        
200g mixed nuts

·        
Juice of 1 lime

·        
3tbsp brown sugar

·        
2tsp jerk seasoning

·        
1tsp chilli fakes

·        
1tsp sea salt

Recipe

·        
Gently heat the nuts in a dry pan, shaking or 5 mins until
toasted, then tip onto a plate.

In the hot pan, tip in the rest of the ingredients. The sugar
will melt and bubble in 10 secs. Return the nuts to the pan and shake to coat.
Tip on to a plate to cool.

Sweet Potato Dip

Plantain is a banana-shaped fruit, and a Caribbean
favourite.

Ingredients

·        
3 large sweet potatoes, whole

·        
Juice of 1 lime

·        
1 garlic clove, crushed

·        
150ml natural yogurt

·        
A pinch of chilli fakes

·        
Grace Plantain Chips or spicy crisps

Recipe

·        
Pre-heat the oven to 180°C/Gas 4. Put the sweet potatoes in the
bottom of the oven and bake for 45 mins.

·        
Remove the hot potatoes and leave to cool on a wire rack. When
cool enough to handle, peel off the skins and pulse in a food processor with
the lime juice, garlic and yogurt. Sprinkle with chilli fakes and serve the dip
cold with the plantain chips.
