Alkaline Inspiration: Salad In Seconds (part 2) – Citrus Seaweed salad

Citrus Seaweed salad

Serves: 2 (as a side salad)

Ingredients

·        
30g wakame seaweed

·        
1 grapefruit, segmented

·        
1 orange, segmented

·        
40g cucumber, chopped into thin cubes

·        
1 spring onion, finely sliced

·        
20g dill, roughly chopped

·        
1 tbsp sesame seeds

·        
2 tbsp Asian dressing

Recipe

To make the Asian dressing, blitz in afood processor 1 tsp chopped
lemongrass, 1 tsp chilli, 1/8 tsp black onion seed, 1 lime leaf, 2 tbsp olive
oil, 1 tbsp tamari, 1/2 tsp coconut palm sugar, 1 slice root ginger, 1 sprig
coriander, 1 tbsp sesame oil, 1 tbsp water, 1 tbsp water, 1/2 clove garlic.

Soak the seaweed in warm water for 15 minutes. Drain, then cut
the stalks off and slice into 1cm wide strips. Combine all the ingredients and

Use your hands to mix together.
