Curried Kumara Soup

1 onion, chopped·
Cooking oil spray·
¼ cup korma curry paste·
500g kumara, chopped·
1 chicken stock cube·
⅓ cup chopped flat-leaf parsley·
½ cup croutons
Recipe
Spray onion with oil. Heat a heavy-based saucepan over high
heat. Cook and stir onion for 2 minutes. Add curry paste; cook and stir for 30
seconds. Add kumara and crumbled stock cube; cook and stir for 2 minutes. Add 3
cups water. Bring to the boil. Cook, covered, for 10 minutes or until kumara is
tender; reserve a quarter of the kumara. Blend soup until smooth. Add reserved
kumara to soup. Serve topped with parsley and croutons.
