Good quality ice-cream 500g tub, use your
favourite flavour

      
Waffle biscuits 16

      
Decorate with pistachio nuts or hazelnuts, cocoa
nibs, chocolate sprinkles

Recipe

1.   
Line a baking tray with baking parchment. If
your ice-cream is in a cylindrical tub, cut and peel away the packaging and
then cut into 2½cm slices. Sandwich each slice between 2 biscuits.
Alternatively, let the ice-cream soften until scoopable then sandwich large
scoops between 2 biscuits and gently press together so the ice-cream is even
and reaches the edges. Scrape off any excess and re-freeze until firm.

2.    To serve, gently press nuts or cocoa nibs into one side of the
ice-cream
