Fruit-choc muesli slice

Ingredient

·        
1 cup self-raising flour

·        
¼ cup skim-milk powder

·        
2 tablespoons shredded coconut, plus extra 1
tablespoon, to serve

·        
½ cup firmly packed brown sugar

·        
2 tablespoons sunflower seeds

·        
½ cup rolled oats

·        
¹⁄³ cup sultanas

·        
¹⁄³ cup chopped dried apricots

·        
¹⁄³ cup chopped dried dates

·        
¾ cup reduced-fat milk

·        
1 tablespoon reduced-fat table spread, melted

·        
30g dark chocolate, melted

2 eggs

Recipe

Preheat oven to 180°C. Line a 15cm x 30cm slice
pan with baking paper.

·        
Mix flour, milk powder, coconut, sugar,
sunflower seeds, oats and dried fruit in a large bowl. Whisk milk, table spread
and eggs in a bowl and add to flour mixture; gently mix until just combined.

Pour mixture into pan and bake for 25–30
minutes, or until firm. Remove from oven and leave slice to stand in pan for 15
minutes; turn out onto a wire rack to cool.

·        
Drizzle melted chocolate over slice, sprinkle
with extra coconut and slice into 16 pieces.
