Sweet potatoes are part of the
morning glory family. In the United States there are many varieties,
but the two main ones are a pale sweet potato and the orange-skinned
variety known as yams. The true yam is not related to the sweet potato.
Do not refrigerate yams, because they will develop a hard core and
their flavor will deteriorate.
