Gin-pressed cucumber

½ cucumber, peeled

25ml gin

How to do it

1.    Cut the cucumber into cubes and remove all seeds. Place in a sealable
plastic bag and add the gin. Remove all air from the bag and seal.

2.    Set aside in the fridge to infuse, about 2 hours, and then drain off
excess juices.

Cucumber spaghetti

1.    Twist the cucumber through a Chinese mandoline or slice into fine,
long strands.

2.    Place the cucumber strands in a pot of boiling water, about 30 seconds,
and refresh in ice water.

3.    Drain completely and set aside.
